Recipe: Chocolate Cake

I halfed this recipe to make sure it tasted good. It did, and the only thing I would add would be about a tsp. honey for 1/2 the recipe or a 2 tsp for the whole recipe. I also baked it in muffin tins because I didn't have a cake pan. On the plus side each muffin/cake had only 110 calories and 4 carbs and using the cacao powder they are very filling!

Ingredients (Full Recipe...should make 10 muffin/cakes)
4 eggs (seperate the whites and the yolk)
1/2 cup sugar substitute
1 cup almonds (chopped coarsely)
1 tsp vanilla (I used 1 tsp for the half recipe bc I like vanilla...you could add more to the full)
2 tbsp. almond flour
1 tsp. baking soda (I also used 1 tsp for the half recipe...as muffins you need that ish to rise)
3 tbsp. cocao powder
*I would add 1 - 2 tsp honey

Directions:
Pull out the blender, put the whites and the sugar substitute and blend till the powder and whites are one mixture. Add in this order the remaining ingredients blending for a few minutes in between each addition...if you choose to add honey, I'd add it last when the mixture is liquidy. Blend the whole thing for two minutes.

Order:
Almonds, vanilla, almond flour, baking soda, yolks, cocao, honey (optional)

Bake for 20 minutes @ 350
